Good Life Guy’s Tropical Chicken Skewers

6 Boneless Skinless Chicken Breast – 1” cubes
6-8 bamboo skewers soaked in water
¼ cup toasted sesame seeds

Marinade

¼ cup dry Fino Sherry
¼ cup Hoisin sauce
¼ cup Plum sauce
4 cloves garlic minced
Juice of 1 each:
Lemon
Lime
Orange
1Tbsp dried parsley or 2 Tbsp fresh minced
½ Tbsp paprika
½ Tbsp honey

Skewer the cubed chicken and place in the marinade for two-three hours.  Prior to grilling, sprinkle with sesame seeds.

Grill over medium high direct heat about 4 minutes per side Until done.

Bring the marinade to a simmer and reduce for 2-3 minutes And use as a dipping sauce.

Good Life Guy’s Grilled Gold Potatoes

8-10 small Yukon Gold potatoes, halved.

2/3 cup olive oil
½ cup fresh sage diced
¼ cup fresh chives diced
¼ cup fresh oregano
1 Tbsp sea salt
½ Tbsp black pepper 

Bring the potatoes to a boil in a large pot of cold water, boil for two minutes, drain and cool.

Put the potatoes in a large zip lock bag with the oil and spices and shake to coat.  Skewer the potatoes.

Over medium high heat, grill cut side down for 3-4 minutes

Turn cut side up and place indirect, covered, until done.
